I agree with the posters who mentioned salmonella. Yikes. She needs to take off that red string because it may be covered in chicken juice. Gross. I hope she washed her hands between steps and they just cut it out for time. There was a lot of cross contamination going on. And then she used the towel to wipe her mouth at the end. Eek.

2.) cover the chicken? really? To what? Steam it? mmmm. soggy uncaramelized chicken skiiiiin. yummm.

Gwyneth , do you know what is cross contamination?????? Do you have water in that kitchen????? You never wash your hands, or wipe the cutting board, you went from one task to another without cleaning, you need to start from the basics, clean, clean, clean, as you go.
