It doesn't matter that they have dash cams… they cannot prove what the note said. It could have been a grocery list for all they can prove, and any attempt to claim it was a robbery demand is now legally inadmissible on the grounds of speculation.
Granted, there is presumably other damning evidence against the guy and hopefully the note won't be necessary in order to secure a conviction, but the mere fact that he ate the note is not going to be nearly as incriminating as the note itself would have been. From a purely legal stand-point, it was a very good move.
