Last night the Food Network Fox News gave us an inneresting take on the UC Davis Pepper spraying incident! According to chemist anchor Megyn Kelly pepper spray is a "derivative of actual pepper."

If she had looked on Wikipedia like any good journalist, she could have avoided that embarrassing mistake.

Bill O'Reily at least got some of the effects right though: "That just burns your eyes right?" That's right, Billy! Pepper spray is just like shampoo. If your shampoo is made of chemicals that burn your throat and corneas!

    Active Ingredient in Pepper Spray

    Pepper spray is often called Oleoresin Capsicum (OC) Spray, which roughly translates to “pepper resin spray”. Within this resin is contained the active compound Capsaicin. Capsaicin is extracted from peppers by grinding them down to an extremely fine “dust”, and then using an organic solvent (such as ethanol) to draw out the compound. Once the solvent is evaporated, only the waxy Capsaicin remains. This compound is so powerful that as little as one milligram is enough to cause your skin to form painful blisters.

    How Pepper Spray is Made

    In order to ensure an even spray, the Capsaicin (or Oleoresin Capsicum, as it is often called at this stage) is suspended in water (or sometimes an oil-based solution) by using an emulsifier. It is also combined with a propellant, which allows the spray to be shot outward from a canister. Once the liquid is ready, it may then be pressurized to be used as an aerosol spray.

    To make the spray used by law enforcement officers and police to control crowds, manufacturers take a concentrated oil made from chili peppers and combine it with water, glycol (a chemical used in shaving creams and liquid soaps) and a propellent such as nitrogen, according to Bob Nance, vice president of operations at Security Equipment Corp. The company makes pepper spray and other irritants at its Fenton, Mo., headquarters under the Sabre brand name.

    Pepper spray comes in several strengths, ranging from 1 percent to 10 percent OC. That's equivalent to 2 million to 15 million Scoville Heat Units (SHU), which is a measure of the potency of the chili pepper extract.

    With pepper spray, especially the large canisters used by law enforcement there is a side effect no one is speaking of that will cause damage. The corneas can be frozen if it is used at too close a range, causing permanent damage. The cop in the video made a bad move. Those big cans are designed to disperse the stuff long range and over wide areas. Science tells us that when tightly pressurized gas is expanded quickly the temperature of the gas falls. Don't believe me? Go to the store and get some computer duster and hold it upside down and spray yourself. Just don't inhale it out of the can or you might end up on Intervention.

    I saw this broadcast, first of all I know the difference between news and commentary. The O'Reilly Factor is commentary. With that said, I would have believed that the police were wrong until I heard the truth. First, it was the UC Davis chancellor Linda Katehi who ordered the police to remove the students. Secondly, the police were following protocol to use pepper spray before physical force. Thirdly, if I hadn't heard the full story, I would have thought that the police were a bunch of thugs, but they were just following orders, to remove the students! Finally, go to a trustworthy fact check website and research news stories yourself. Interesting how they've got NOTHING on Bill O'Reilly! So, to the Fox News haters, nobody is listening to you. Their ratings are the best! You can't argue that FACT!!!
