Johnny Di Francesco is known throughout the world as one of the best pizza makers ever, and his latest project does nothing to discredit that claim!
And his inspiration for the pizza came an unlikely source: Teenage Mutant Ninja Turtles!
A line in the movie said it was an "culinary impossibility" to make a 99 cheese pizza.
Well, Di Francesco heard that and took it as a challenge!
The way that Di Francesco did it was by melting down 94 cheeses including "gorgonzola, pecorino and Taleggio" before freezing them in a single block.

Here's what he said about that process:
"I tried six different times before I got the right texture and the right flavors. I quickly learned that you had to melt down the cheeses so that you wouldn't get stringiness. You had to use the right cheeses. For example, you couldn't melt down mozzarella because the curds break down."
And he also topped the pizza with the following cheeses - "buffalo mozzarella, goat cheese, fior di latte, ricotta and raspadura" - to make it to 99 cheeses!
He sold the pizza at his restaurant 400 Gradi in Melbourne where they sold 100 pies in less than two hours!
And people were clamoring for a slice!
Here's how Di Francesco described his pizza:
"It's amazing how during the time you're eating it, at different stages you get little bursts of flavors like the pecorino you get a really slight hint of that while you're eating it, and then you taste the beautiful gorgonzola and then the softness of the raspadura. It's amazing how if you really concentrate you get those flavors come out at various times."
We're getting hungry just thinking about it!
And although the 99 cheese pizza isn't on the menu, since its creation was supposed to be a special one time thing, Di Francesco has hinted that he may bring it back one day.
Hopefully he'll let us know in advance so we can fly down to Australia to try a slice!
