The man who America has had in the back of their minds all week is finally speaking up!
Our favorite part of the day is when we get to read the delicious recipe provided by the wonderful Mariko, one of our newest FitPerezcious Contributors!
Here is is, folks:
Baked Apricot Chicken
Keep a bag of frozen chicken breasts on hand to make this quick and easy meal. Put together before going to bed (its okay if the chicken is frozen) so its ready when you get home from work. Use high quality vinaigrette that contains fresh herbs and olive oil for more flavors. Also try substituting garlic and strawberry for the ginger and apricot preserves.
4 boneless, skinless chicken breasts
1 Tbsp grated ginger (or 1 Tsp dried)
½ cup apricot preserves
1/3 cup fat free balsamic vinaigrette / Italian dressing
Combine all ingredients in large zip lock bag, and marinate for 2 – 24 hours. Place chicken in oven safe dish, and bake at 350 degrees for 25-30 minutes. During cooking, spoon remaining marinade over chicken. Serve with salad and brown rice / quinoa to soak up the delicious sauce!
