Our favorite part of the day is when we get to read the delicious recipe provided by the wonderful Mariko, one of our newest FitPerezcious Contributors!
Here is is, folks:
Steamed Mussels with Wine (or Beer)
Mussels are high in protein, and low in fat and calories: making them perfect for a Fit lifestyle. Keep a box of frozen New Zealand mussels on hand (available at your local Asian grocery store) to make an impressive meal in minutes. Serve with a salad and healthy noodles (whole wheat, gluten-free, high protein) to soak up the delicious sauce. Yum! Serves 2
1 ¼ cup dry white wine or beer
2 ¼ lbs mussels (cleaned if fresh, or frozen)
3 Tbsp Fresh Herbs (parsley, tarragon, thyme)
2 Tbsp Butter (or olive oil)
Melt butter in large pan. Add wine or beer and bring to boil for 1-2 minutes. Add mussels and cover pan with lid. Cook mussels over medium heat for 4-5 minutes (6 if they were frozen) lightly shaking the pan during cooking. Remove mussels with tongs, and place in large bowl. Bring the remaining liquid to a boil for 2-3 minutes, and season with salt and pepper. Add fresh herbs, pour the liquid over the mussels and serve immediately! Enjoy!
