Indian Spiced Shrimp with Ginger Sauce
These shrimp are delicious! This recipe is versatile; serve it as a main, on a salad with fresh mango and grilled onions or as an appetizer. Serves 4
¾ apricot preserves (look for natural, lower sugar varieties)
1 Tbsp grated fresh ginger
1 Lb shrimp (raw, XL, peeled and deveined)
1 Tbsp Indian curry powder
Combine preserves and ginger in small saucepan, and cook over medium heat for 2-3 minutes. Add shrimp, curry powder and 3 Tbsp of apricot sauce in large bowl, and mix until combined. Spread out on baking sheet, and broil (550+ degrees) for 3-4 minutes, or until opaque. Serve with remaining sauce for dipping.
