Your Recipe of the Day from Mariko is… Sweet Potato and Lentil Curry!
Sweet Potato and Lentil Curry
I love making curry! There are many different types of curry pastes; green, red, yellow, Panang … and can be found at most Asian grocery stores. I always have paste and coconut milk on hand if I need a quick meal; I add whatever meat and veggies I have available – and voila! A delicious and nutritious meal in minutes! Serves 4
2 Tbsp red curry paste
1 can lite coconut milk
8 oz sweet potato, peeled and cubed.
1 cup green lentils (you can find them canned)
In non-stick pan over medium heat, combine paste, coconut milk and ½ cup water and mix until blended. Add sweet potato, bring to boil, then cover and reduce to simmer, about 25 minutes. Add lentils and simmer for another 5-10 minutes or until soft. Serve with brown rice or quinoa and enjoy!
