Scared of tofu? Try this simple vegan recipe for a delicious dessert! Silken tofu has a pudding like consistency and is high in protein – making it perfect for a fit lifestyle. Experiment with different berries, or add 2 Tbsp unsweetened cocoa for a chocolate kick!
8 ounces fresh raspberries
12 ounces soft silken tofu
3 Tbsp agave nectar
1 Tsp vanilla
Mix all ingredients in a blender, and puree until well combined. Pour into 4 dessert bowls, and chill for 2-3 hours or until firm. Enjoy!
