Watermelon is great for a Fit Lifestyle: its high in A, C and B vitamins, antioxidants and beta-carotene to fight cancer, and fiber for losing weight. Watermelon is always the sweetest at the end of the summer, so enjoy it while you can. This light and refreshing soup is the perfect appetizer or between meal snack.

4 cups cubed, seeded watermelon (a mini personal seedless watermelon is the perfect size)
2 Tbsp lemon juice
1 Tbsp chopped mint
1 Tbsp honey or agave

Blend all ingredients in blender until smooth. Refrigerate in separate container for at least 2 hours, and enjoy!
