Brazilian Breakfast Avocado Pudding
A friend shared this recipe with me; one of her favorites from growing up in Brazil. Avocados are a great way to start the day: they are high in vitamin B,K,E and Fiber to kickstart your metabolism and boost energy, while helping your hair and skin tone. This recipe is also great for dessert - just garnish with a drizzle of chocolate syrup!
1 large Avocado
1-2 Tablespoons fresh lime juice
1-2 Tablespoons sweetener (agave, honey or superfine sugar)
pinch of salt
Put all ingredients in a blender, and mix until smooth and creamy. I often serve mine in a martini glass - it makes breakfast more fabulous! Eat as is, or garnish with your favorite berries and granola. Enjoy!
