Sodium nitrate and sodium nitrite are used in pesticides, fertilizers, and they’re used as a food preservative in packaged meat. When used in this form, they can form nitrosamines, which have been linked to cancer. However, when consumed in their natural state as found in vegetables, they do not appear to be harmful.
