4 Ingredient Gluten-free Chocolate Chip Pancakes!

Pancakes are amazing, and when combined with chocolate – could arguably be one of the best foods ever! Here is a quick and easy version that can be made in minutes, is gluten-free and low carb! I’ll whip this recipe up whenever I have a super over ripe banana, and they are always delicious. Also try substituting the chocolate for chopped nuts, dried fruit or ground flax seed for an extra boost of awesome.

2 eggs
½ cup ripe banana, mashed
1/8 teaspoon baking powder
2 tablespoons dark chocolate chips

Mix all ingredients together, and preheat griddle to medium high heat. Grease (try coconut oil – its my new favorite for pancakes) and drop batter by the spoonful. Cook for a couple of minutes (or until golden) and flip. Serve with your favorite syrup or jam, and enjoy!

Here Come The Gluten-Free Coconut Macaroons!!

This is an incredibly easy recipe if you want fresh baked cookies in minutes! Try experimenting by adding 2 tablespoons unsweetened cocoa powder, 1/2 cup chopped nuts, or fresh grated orange / lemon rind for an added kick!

5 1/2 cups flaked coconut, unsweetened
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract
1 1/2 teaspoons almond extract

Preheat oven to 350 degrees. Add all ingredients to bowl, and mix until combined. Drop by rounded spoonfuls onto a parchment lined or greased baking sheet. Bake 8-10 minutes or until golden brown. Immediately remove from pan and cool to room temperature. Makes about 4 dozen

Mario Lopez, Julianne Moore Help Udi’s Gluten Free Table Make Huge Waves At Sundance!!

Last year, there were a lot of people doing amazing things at Sundance. Movies were blowing people away, celebs were everywhere. It was an amazing time — that needed amazing food.

Enter Udi and their gluten-free menu!! Everyone LOVED what they had to offer, with delicious and healthy food for all.

Well guess what? They've back and bigger then ever with Udi’s Gluten Free Table, a full service pop-up restaurant! They served a menu of quesadillas, grilled cheese sandwiches, flatbreads and more!

It looks like the fame preceded them, because the celebs were HUNGRY, including Julianne Moore, Mario Lopez, Mekhi Pfifer, and many more!

Holiday Recipe: Dairy & Gluten Free Strawberry Pomegranate Mini Pavlovas!

For those of us who love to enjoy sweets during the holidays but don’t want the guilt that comes with indulging, Elizabeth Minett, top model and author of the popular fashion and food blog, HAUT APPÉTIT, recommends this healthy AND delicious recipe for the season:

Dairy & Gluten Free Strawberry Pomegranate Mini Pavlovas

Pavlova
4 large egg whites at room temperature
1 cup castor sugar
1 tsp apple cider vinegar
1.2 tblsp corn starch

Topping
1 can full fat coconut milk
2 Tblsp confectioner's sugar
sliced strawberries for topping
pomegranate seeds for topping

Directions:

1. Preheat the oven to 275F. Line a baking tray with baking paper.

2. Using a standmixer or electric mixer, whisk the egg whites on high until they form soft peaks. A tablespoon at a time, slowly add in the sugar (if you add it all at once, the egg whites will not stay light and fluffy!) You will now have glossy stiff peaks, also known as, meringue!

3. Once you have stopped beating the egg whites, sprinkle the vinegar and corn starch over top and fold in gently with a metal spoon (this also prevents the egg whites from losing their stiffness).

4. Spoon 8 small mounds of the meringue onto the baking paper and smooth into small circles, leaving the centers slightly lower than the sides.

5. Bake for 30mins. Then turn off the oven, and allow the pavlovas to cool for another 45mins, with the oven door slightly ajar (this is a very important step!)

Whipped Coconut Cream

As a dairy replacement, I whip coconut cream to get a heavenly substitute. 

1 can full fat coconut milk, cooled in the fridge
2 Tblsp confectioner's sugar

Directions:

1. Turn the coconut milk can upside down, and open it around the bottom. There will be a milky liquid at the top, and pour this away. At the bottom of the can will be left the coconut cream - a thick white cream.

2. Spoon the coconut cream into a standmixer or bowl, and whisk on high until it becomes thick and creamy. One tablespoon at a time, add the confectioner's sugar to the cream. Whisk for another 2 mins.

Assembly

Spoon whipped coconut cream on top of the mini pavlovas and top with strawberries and pomegranate seeds.

Makes 8 Pavlovas.
