Holiday Recipe: Dairy & Gluten Free Strawberry Pomegranate Mini Pavlovas!

For those of us who love to enjoy sweets during the holidays but don’t want the guilt that comes with indulging, Elizabeth Minett, top model and author of the popular fashion and food blog, HAUT APPÉTIT, recommends this healthy AND delicious recipe for the season:

Dairy & Gluten Free Strawberry Pomegranate Mini Pavlovas

Pavlova
4 large egg whites at room temperature
1 cup castor sugar
1 tsp apple cider vinegar
1.2 tblsp corn starch

Topping
1 can full fat coconut milk
2 Tblsp confectioner's sugar
sliced strawberries for topping
pomegranate seeds for topping

Directions:

1. Preheat the oven to 275F. Line a baking tray with baking paper.

2. Using a standmixer or electric mixer, whisk the egg whites on high until they form soft peaks. A tablespoon at a time, slowly add in the sugar (if you add it all at once, the egg whites will not stay light and fluffy!) You will now have glossy stiff peaks, also known as, meringue!

3. Once you have stopped beating the egg whites, sprinkle the vinegar and corn starch over top and fold in gently with a metal spoon (this also prevents the egg whites from losing their stiffness).

4. Spoon 8 small mounds of the meringue onto the baking paper and smooth into small circles, leaving the centers slightly lower than the sides.

5. Bake for 30mins. Then turn off the oven, and allow the pavlovas to cool for another 45mins, with the oven door slightly ajar (this is a very important step!)

Whipped Coconut Cream

As a dairy replacement, I whip coconut cream to get a heavenly substitute. 

1 can full fat coconut milk, cooled in the fridge
2 Tblsp confectioner's sugar

Directions:

1. Turn the coconut milk can upside down, and open it around the bottom. There will be a milky liquid at the top, and pour this away. At the bottom of the can will be left the coconut cream - a thick white cream.

2. Spoon the coconut cream into a standmixer or bowl, and whisk on high until it becomes thick and creamy. One tablespoon at a time, add the confectioner's sugar to the cream. Whisk for another 2 mins.

Assembly

Spoon whipped coconut cream on top of the mini pavlovas and top with strawberries and pomegranate seeds.

Makes 8 Pavlovas.

First thing's first — we should say that that there are reports that a gluten-free diet might not be as fab as everyone thinks… unless you truly have a gluten intolerance.

Having said that, Kim Kardashian's body is ROCKING here, whether or not it's due to a necessary gluten-free diet — which is exactly what she seems to be claiming of the photo!

This is actually an older pic of her from Instagram, but she shared it again on Friday with these words of wisdom along with it:

“Gluten free is the way to be…Oh Hi.”

A lot of celebs have been jumping on the gluten-free train, including Miley Cyrus, but she specifically said she has that pesky gluten allergy!

Like we said though: either way, you're lookin' fab, Kim!

Celebs Eat Gluten Free At Sundance

Gluten free just got trendy!

The Sundance Film Festival is in full swing and in between screenings, celebs are trying to keep themselves busy by either hitting the slopes or the party scene.

A few, however, opted for a more relaxing treat and headed to the Fender Lounge and Miami Oasis Gifting Lounge on Sunday to taste a variety of gluten-free food from Udi.

Elizabeth Olson, Emily Blunt, Rashida Jones, Mario Lopez, and Lil Jon were just a few of the stars stopping by to take part in the gluten free movement.

On Sunday evening, the food company provided a gluten-free meal at the Creative Coalition’s Annual Spotlight Initiative Awards Gala Dinner where Kate Bosworth and AnnaLyne McCord were honored.

Good thing they picked Udi to provide the foot because the 90210 actress revealed that she's actually intolerant to gluten and can no longer eat wheat based food!

Is Gluten-Free A Fad??

Eating gluten-free food products has become the latest fad in the dietary world.

For those who suffer from celiac disease, gluten-free does provide relief in that when eating gluten, it results in damaging the small intestine and impairs the ability to absorb nutrients.

Only less than 1% of Americans have celiac disease though, so why the sudden fad?

Some advocates of the diet say that gluten exacerbates the symptoms of autism and can also lead to weight loss. However, a new study reveals that there have only been two reliable studies that have linked gluten to autism and weight loss, but it only involved 35 participants.

So, the question is, do we need to lead a gluten-free life?

The answer is yes, if you have celiac disease.

However, if you do not suffer from the disease, then it is not necessary to erase gluten food products from your diet. In fact, by making gluten-free a fad, it becomes less of a serious need for those with celiac disease.

The bottom line is that whatever makes you feel good, you should continue to do it. If you find that eating products that contain gluten makes you feel sick in any way, then there might be a more serious problem, such as celiac disease. Contact your doctor if you have any questions.

Gluten-free diets are blowing up among celebs, but it may not be the best choice for everybody.

Lisa DeFazio breaks it down — if you don’t have celiac disease, you may be wasting your time and actually doing your body a disservice by following a gluten-free diet.

If you think you may have celiac disease, check with a doctor. If not, eat healthy, but not necessarily gluten-free!

Boston Market is making some big changes — big, HEALTHY changes!

The restaurant has been working to make their menu healthier, and the latest change is gluten-free chicken gravy.

While the gravy is probably still pretty fatty, we like the step they’re taking! More chain restaurants need to follow their example!
