TY KU Yuzu-Acai Cooler — Better Than Holiday Punch!

Yuzu-Acai Cooler Blue Ginger Holiday Punch

Tired of boring holiday punch? Us too!

Here's a TY KU creation from Ming Tsai, the Chef at Blue Ginger!

The Yuzu-Acai Cooler has a great berry flavor that's super refreshing. Not overly sweet. It's light as a holiday punch with an extra boost of antioxidants to help get you through the season.

Ingredients:

2 ounces TY KU Soju
1/2 ounce Peach Liquor
3/4 ounce Ginger Syrup* (buy online or make from scratch)
3/4 ounce Acai Juice
3/4 ounce Yuzu Juice (or Lemon Juice)

Mix It:

Shake with ice, pour into tall Collins glass. Top with Soda Water. Garnish with lime wheel.

* To make ginger syrup: Combine 4 cups sugar, 2 cups fresh ginger (cut into ⅛-inch slices), and 2 cups water in a medium saucepan over high heat. Bring to a boil. Reduce heat and simmer until syrupy and reduced by half, about 40 to 45 minutes. Strain ginger pieces out and reserve syrup.

We're so lucky to have Top Chef Richard Blais bringing us new and fabulously delicious recipes ALL HOLIDAY SEASON this year! Our stomachs might not be able to handle it all!

Ahhhh! So good!

Here's his wonderful recipe for Dannon Oikos Greek Yogurt Pumpkin Cheesecake:

Ingredients

4 oz. cream Cheese 1⁄2 cup sugar
1⁄4 tsp salt
1⁄2 tsp vanilla
By Richard Blais
1⁄4 tsp cinnamon
4 oz. canned pumpkin pie filling
4 eggs
4 oz. Dannon Oikos plain Greek yogurt

Instructions

1. In a mixer, using the paddle attachment, blend together the sugar and the cream cheese
2. Add in the eggs one at a time, scraping the bowl after each one
3. In a separate bowl, mix together the pumpkin pie filling and Dannon Oikos plain Greek
yogurt
4. Add the yogurt mixture into the cream cheese and mix until fully combined
5. Fill the desired molds and bake at 300F in a water bath for 15-20 minutes

Yields

6-8 servings

Broccoli Cheddar Latkes

Potato latkes are as exciting as vanilla ice cream. I'm sure there are the purists who believe it's best to stick with tradition, but I like to mix things up in the kitch. This year, I'm giving the latke a serious makeover, starting with this recipe for broccoli cheddar latkes!

Ingredients:

1 lb. of broccoli florets, chopped and steamed
1 russet potato, peeled and grated
1 small onion, diced
1/2 cup of panko crumbs
2 eggs
1/2 tsp. black pepper
1/4 tsp. salt
1/4 tsp. cayenne pepper
2 tablespoons flour
1 cup of shredded cheddar cheese
1/4 cup canola oil
oil for frying

Directions:

Steam and chop the broccoli florets. Place in large mixing bowl. Add the grated potato, diced onion, panko crumbs pepper, salt, cayenne pepper, flour, cheese and oil and mix well. Shape into patties and fry until golden brown.

Eat more vegetables with soup!

Vegetable soup is a great way to get more vegetables into your diet without the hassle. When the weather gets colder, its harder to eat a salad than something hot and steamy. I also like to have a pot of vegetable soup in the fridge as a low-calorie and nutritious snack. In a large pot of water, add a variety of your favorite vegetables: I often use cabbage, carrots, peppers, garlic, fennel, squash, fresh herbs - whatever looks good and is on sale. Bring to a boil over medium high heat, and reduce to low until vegetables are soft. Now this is where you can get creative! Garnish with ingredients like salsa, avocado and crushed tortilla chips or parmesan cheese and croutons.
