Wondering what you want to make for dinner tonight? Try another easy and tasty recipe from our gurl, Mariko!

Stuffed Portobello Mushrooms

Portobello mushrooms are high in potassium, which make them a great post-workout food. Use caps that are firm and smooth. The recipe makes 6 sides, but you can also use a pound of crimini mushrooms to make appetizer versions (Crimini are baby portabellas!)

6 medium Portobello mushrooms
¼ cup cheese (I use crumbled goat, but try your favorite, grated)
½ cup roasted red bell peppers, chopped (from the jar, or try roasting your own in the oven)
2 Tbsp Olive Oil

Heat oven to 350 degrees. Remove stems from mushrooms, and place on baking dish. Divide cheese among mushrooms, then sprinkle with bell peppers. Drizzle tops with olive oil, and bake for 15-20 minutes until cheese is melted and mushrooms are tender. Season with pepper (to taste) and serve!

120 calories, 9g fat, 5g carbs, 4.5g protein
