Margaux J. Rathbun, a certified nutritional therapy practitioner, knows A LOT about healthy food! Luckily for you, she also loves to share her knowledge so if you ever have a question, don’t hesitate to ask!
This week, a FitPerez reader and “chronic snacker” asked about some new healthy (but not BORING) snacks to eat throughout the day. If you’re looking for something new to snack on between meals, check out Margaux’s advice below!
Question:
“Hi Margaux! I have been a big fan of yours for over a year now and I love all that you do! Thanks for all the great advice and I had a question for you. I consider myself to be a “chronic snacker” but have recently cut back quite a bit. I was wondering if you could suggest some healthy snacks but NOT BORING snacks for me (something other than carrot sticks and nuts)? I love to cook so if you had any recipes, that would be helpful. Thank you so much!
Answer:
Thanks for your question! When it comes to kicking snack cravings to the curb, always drink a glass of water before you grab that bag of chips or box of processed crackers. Many times, we get the feeling of hunger confused with thirst. Drink the glass of water, wait about 15 minutes, and I am willing to bet your cravings will disappear. Now, when it comes to healthy but not boring snacks, I’ve got you covered. Here are two of my favorite recipes for healthy snacks that I think you will enjoy:
Recipe: Baked Kale Krispies (Kale Chips)
– 1 bunch of kale
– 1 Tbsp olive oil
– A sprinkle or two of your favorite sea salt (I like sel gris)Preheat oven to 200 degrees Fahrenheit. Wash kale thoroughly and dry. Remove the kale leaves from the thick steams and tear into bite-sized pieces. Place leaves in a big bowl. Pour the olive oil into bowl and massage the leaves with the oil until the leaves are all covered. Sprinkle in the sea salt and keep massaging. You can also add your favorite spice to the leaves at this point (garlic powder, rosemary, etc). Spread leaves on a cookie sheet and bake until edges of leaves are brown (but not burnt). I typically keep my kale chips in the oven for 10-15 minutes.
Recipe: Baked Garbanzo Beans Snack
– Can of organic garbanzo beans
– 1-2 Tbsp of cold-pressed extra virgin olive oil
– A dash of organic garlic powder
– Sea salt to taste (again, I love using sel gris)Preheat oven to 350 degrees Farhenhiet. Drain the can of garbanzo beans and shake until they are fairly dry. In a mixing bowl, add olive oil, seasonings, and sea salt. Using your hand, gently massage the ingredients. Lay garbanzo beans flat on a baking sheet and cook for about 45 minutes. I check on the beans every 20 mins or so and roll them around with a spatula to get them evenly cooked.
