Avocados: The Perfect Summer Ingredient!!

If you don’t like avocados, you’re in the minority and you’re TOTALLY missing out!
One person who does NOT want you to miss out is registered dietician Lisa DeFazio! She’s been a contributor here for quite some time, so we listen when she’s got some great advice!
Let her teach you about avocados:

One of MY favorite summer ingredients is the avocado! They are rich, creamy, and full of healthy fats!
Picking the avocado: squeeze the avocado and see if the flesh gives in slightly. NOT mushy, but you want to be soft. The darker the avocado, the more ripe it is. If you pick a firm, unripe, green avocado, it may take about 3 to 5 days for it to ripen.
To prevent the avocado from browning, you can wrap the avocado tightly in plastic wrap or aluminum foil before storing it. You can also squeeze lemon juice over the avocado to avoid browning. If you want to prevent guacamole from browning, store it with an avocado pit!
Health Benefits:
Avocados contain a lot of fat, BUT the good news is that it is mainly monounsaturated fat, which lowers your bad cholesterol and raises your good cholesterol. Avocados are also loaded with potassium.
Lisa D’s favorite ways to eat avocados:
Avocado Appetizer or Snack:
Ingredients:
-whole grain crackers
-1 ripe avocado, sliced
-2 Tbs. hummus
-1 dash celery salt
Directions: On each cracker, spread hummus and layer avocado slices on top. Sprinkle with celery salt. Cut in half and serve with fruit of your choice.
Avocado and Orange Salad
Ingredients:
-1 large avocado sliced
-1 bunch lettuce leaf
-1 bunch green onions sliced
-3 large orange sectioned & cut into chunk
Dressing:
-1/2 C. peanut oil
-1/2 C. orange juice
-2 Tbs. red wine vinegar
-1/2 tsp. orange peel grated
Directions: In salad bowl, combine avocado, lettuce, sliced onion and oranges. Mix all dressing ingredients and pour dressing over the salad just before serving
