
While some of us may be on an Easter egg hunt this coming Sunday (although probably for eating), I’m here to tell you that we should all be hunting for eggs at the natural food store for consumption as often as we’d like. Unless you have a food allergy to eggs, eggs are not the demonic foods they were previously portrayed to be and perhaps still are today by some people. They can actually be very healthy, depending on where they come from.
Without getting too technical with the science, let’s make one thing clear in case you are still skeptical; eggs don’t increase “bad” cholesterol. When it comes to HDL and LDL, eggs increase HDL and increase LDL particle size – two changes in a positive direction. In reality though, cholesterol isn’t even the issue because dietary cholesterol has if at all, a trivial impact on serum cholesterol levels. Moreover, there has been evidence that has affirmed no link between eggs and heart disease. So the point is not only should you should be eating eggs because of their powerful nutrients, you must eat the yolk as well to get the full benefits.
Aside from the obvious facts about eggs being a fantastic source of low calorie protein, there are a host of other great minerals and vitamins that eggs provide that we need. As you will see below, there’s quite a profound difference in the quantity of nutrients between your typical commercial egg and the elusive pasture-raised or organic egg.
