Delicious Homemade Fortune Cookies!!

Do U know who Lauryn Cohen, aka the Bella Baker is??

Well, she's the queen of sweet, and is known for her creative treats and crafts! She recently launched a holiday baking guide called Sweet Gifts, filled with innovative and delicious recipes for the holidays.

She wants us to kick off the new year in style — so listen up! Here are some of her favorite NYE recipes!

Homemade Fortune Cookies:

5 tablespoons unsalted butter
4 egg whites
1 cup superfine sugar
1 cup all-purpose flour
1 pinch salt
3 tablespoons heavy whipping cream
2 teaspoons vanilla extract
2 teaspoons peach schnapps (optional)
mini muffin tin

Write a message or resolution on a small strip of paper. Preheat oven to 375°F.

Line two baking sheets with parchment paper. Melt butter in the microwave and set aside to cool.

In the bowl of a stand mixer fitted with the paddle attachment, combine egg whites and sugar for 1 minute. Mix in flour and salt; beat until incorporated. Mix in the melted butter, heavy cream, vanilla, and peach schnapps and beat until smooth.

Place 4 or 5 teaspoon-size scoops of batter at least 3 inches apart on prepared baking sheets (you make only a few cookies at a time because you will need to work quickly with them once they are removed from the oven). Using the back of the spoon, smooth batter into flat, thin, even rounds about 3 inches in diameter (the batter should be as thin as possible; otherwise it will be difficult to fold the cookies once they come out of the oven). Bake 8–9 minutes or until edges are just lightly golden brown. Remove from oven.

Working very quickly, place a paper strip in the center of the cookie. Fold cookie in half and gently press down on the round side to seal it in place.

Take the two corners of the straight folded side and pull them in toward each other, coaxing the middle of the cookie inward to form the familiar shape of the fortune cookie. Place folded cookies immediately in a mini muffin tin to hold their shape until firm. Makes 30 fortune cookies.

Tip

Peach schnapps adds an unexpected bite of flavor to these crispy cookies, and it happens to be my grandma’s favorite flavor addition to many of her cookie recipes. If making these with the kids, omit the schnapps or just add it to half the batter.

Mmmmmmm!!

Christmas wouldn't be Christmas without family!!

The unfortunate part of being a sports star is that more often than not, you have to work the holidays. Even if "working" means "playing a game." Luckily for Kobe, Vanessa and his kids were able to make it to the game, despite it being Christmas!

Vanessa, Natalia Diamante, and Gianna Maria-Onore all came and showed their holiday support courtside.

We love it!

Plus, this means they were able to get us a last minute gift — that giant foam finger we've always wanted. LOLz!

We wonder if they ran into Mario Lopez!

He was spotted strolling around New York City yesterday, shopping at Prada and Frye in SoHo.

McDonalds Urges Franchises To Stay Open On Christmas Day

McDonald's sales had dropped 2.2% in October, so they stayed open on Thanksgiving.

And wouldn't you know it, their sales climbed 2.5% in November!

So of course they'd like to try it again, to make even more money this holiday season.

That's right, they want locations to stay open on Christmas day!!

Nothing says the holidays quite like a pickle flavored candy cane, right guys??

Barf!

Not a single human wants these, so we don't even know they exist. Maybe to display them on a shelf and have a laugh about them once in a while. Maybe just as a big middle finger gift to someone you don't really like. Your guess is as good as ours! LOLz!

Top Chef Richard Blais Holiday Recipe Series: Pumpkin Cheesecake!

We're so lucky to have Top Chef Richard Blais bringing us new and fabulously delicious recipes ALL HOLIDAY SEASON this year! Our stomachs might not be able to handle it all!

Ahhhh! So good!

Here's his wonderful recipe for Dannon Oikos Greek Yogurt Pumpkin Cheesecake:

Ingredients

4 oz. cream Cheese 1⁄2 cup sugar
1⁄4 tsp salt
1⁄2 tsp vanilla
By Richard Blais
1⁄4 tsp cinnamon
4 oz. canned pumpkin pie filling
4 eggs
4 oz. Dannon Oikos plain Greek yogurt

Instructions

1. In a mixer, using the paddle attachment, blend together the sugar and the cream cheese
2. Add in the eggs one at a time, scraping the bowl after each one
3. In a separate bowl, mix together the pumpkin pie filling and Dannon Oikos plain Greek
yogurt
4. Add the yogurt mixture into the cream cheese and mix until fully combined
5. Fill the desired molds and bake at 300F in a water bath for 15-20 minutes

Yields

6-8 servings

Who doesn't love cheesecake??
