Today it’s Stuffed Portobello Mushrooms!
Here it is:
Stuffed Portobello Mushrooms
Portobello mushrooms are high in potassium, which make them a great post-workout food. Use caps that are firm and smooth. The recipe makes 6 sides, but you can also use a pound of crimini mushrooms to make appetizer versions (Crimini are baby portabellos!)
6 medium Portobello mushrooms
¼ cup cheese (I use crumbled goat, but try your favorite, grated)
½ cup roasted red bell peppers , chopped (from the jar, or try roasting your own in the oven)
2 Tbsp Olive Oil
MMMMMM!!!
Delish!
